Homemade Pesto with Beet Noodles

Recipe Ingredients:

1 package Nora & Ashley’s Beet Noodles

1 cup packed fresh basil leaves, stems remove

3 cloves garlic, skins removed

1/4 cup toasted pine nuts

1/3 cup grated Parmesan cheese

1/3 extra virgin olive oil

Salt and pepper, to taste


In food processor bowl, add basil, garlic, pine nuts and Parmesan cheese. Turn machine on and add olive oil in a steady stream until emulsified. The mixture should be like a paste. Taste and season with salt and pepper. Place pesto in storage container.

Prepare Nora & Ashley’s Beet Noodles according to package directions. Toss prepared noodles with homemade pesto. 

Extra pesto can be stored in the refrigerator for up to a week.
